Kanda was a town where skillful craftsmen were gathered from all over the country in the Edo period. It was the hard-working craftsmen's kitchen and the sacred place of “Edo-mae” culinary culture.
We use homemade flour which is ground with an electric mill in the restaurant. Our homemade buckwheat noodles are prepared and served on that day while it keeps its superb taste.
We have a sommelier fastidiously selecting various kinds of alcoholic drinks including Japanese sake and domestic wine, served in glasses and bottles.
