Chikuyotei opened at the Asari riverbank in Tokyo towards the end of the Edo period.
We grill our live eel lightly without seasoning, then steam once, and apply several coatings of our secret eel sauce before grilling.
Steaming the eel removes excessive oil, leaving the eel and skin soft, and the characteristic rich flavor and mild taste.
