“值得一試但不盡完美的壽司晚餐”
食材新鮮，品質上乘，服務人員態度親切，整體用餐環境也相當舒適。不過壽司的飯明顯偏鬆，有好幾貫在筷子夾起來時就散了，尚未入口就已經破壞了壽司該有的完整與節奏，對這樣價位的餐廳來說，手藝還有進步空間。 The ingredients used at Sushi Mitsukawa are fresh ...and carefully selected — clearly a highlight of the meal. The staff was friendly and professional, and the ambiance was elegant and peaceful, fitting for a high-end sushi experience. That said, the technical execution left something to be desired. Several pieces of sushi fell apart before they reached the mouth, with the rice loosely packed and lacking cohesion. This affected the overall flow and enjoyment of the omakase course. At this price point, one would expect a higher level of precision in the handling and shaping of each piece. Still, I appreciate the quality of the seafood and the hospitality. With some refinement in technique, this could become a truly outstanding sushi destination in Niseko.
