“Chanko hot pot” is a generic term for sumo wrestlers'dishes, that is, dishes normally eaten by sumo wrestlers. The dishes vary with the sumo stable, but mostly consist of chicken, fish, and vegetables cooked in hot pots.
At Chanko Kirishima, we have prepared a light hot pot based on research regarding soup made with white miso, using Shabu Shabu soup stock made with chicken bones.
