We create and provide an entirely new value to pork! Mastery leads to simplicity. While it's hard to explain in one word, all it takes is one bite to understand this value.
The restaurant owner himself personally met and selected the pork producer of the pork he is most satisfied with. We created a "dashi" soup stock and "ponzu" (citrus-based soy sauce) highly compatible with our pork meat. After personally sampling approximately thirty brands of various pork brands worldwide, we carefully selected only the brands we personally felt were most flavorful and satisfying. The thickness of each slice is adjusted for each pork brand to best enhance the unique flavors of each. Our original "dashi" soup stock, created after much trial-and-error, is a flavorful concentration of the original pork flavor with the sweet flavors extracted from vegetables.
