“The all time classic ramen and gyoza is so good!! ”

It’s such a wonderful experience to come to IKkousha at its original flagship shop, the small shop is so authentic and doesn’t have many tourists like Ichiran which is a good thing, because the taste is just more authentic here. Order from the vending machine and one can sit anywhere you like. ...But I would recommend one to sit by the counter as you can see all the chefs in action, they are truly master of their own and they love what they do. Will be back for sure, this is a late posting from March 2019.

“Less is More Part 444 - Radiant Rapturous Rambunctious Ramen Right for the Ravenous ”

The brightest-lit shop on the street! We were walking to Hakata Station from our Airbnb and the glaring illumination emanating from the shop caught our attention. Peering in, it looked busy, cheery and inviting. Always reassuring to notice many locals enjoying their ramen alongside tourists too. I...t was full house when we arrived, so they asked us to wait outside in the drizzle :( Thankfully it was just for 10 minutes. Taking our five seats on the counter facing the busy kitchen was a treat - we enjoyed the ‘live’ action. We ordered ramen in three types of soup - classic pork, black (sesame) & red (spicy). The soup base here is distinguished by its intense pork bone flavour, thicker consistency and unique frothiness. We liked all three broths - each with their unique flavours though slightly over seasoned for our taste. Perfectly done eggs. ‘Liked that we could choose the consistency or ‘done-ness’ of the noodles. ‘Hard’ is not that hard actually and best in our opinion. Very good chashu; excellent balance of lean and fat. Overall; given its price point, quality, environment and service - we would recommend without hesitation.

“The Famous Hakata Ramen”

When I checked in to my hotel, I asked the Front Desk where to find the best ramen in Hakata. The receptionist pulled out a map with 8 ramen restaurants and pointed out Ikkousha as her favourite. I was there 10-minutes later. I met a Japanese business man at the ticket machine and he recommended his... favourite. We chatted while we waited a few minutes for our orders to arrive. The ramen was a thick, creamy pork bone ramen with firm noodles, thinly sliced chasu and perfectly cooked egg--heavenly. I returned a couple of days later and had the chef's special (I wish I could remember the exact phrase)--once again it was heaven in a bowl. If you order extra noodles, they are served separately and you add them when you are ready--stops them from overcooking in the hot broth. Wonderful staff and when I found out that they are opening a second shop near my hometown in Canada, I was ecstatic--there will be more Ikkousha ramen in my future!

This place was recommended by the Japanese hotel manager and he was right. Really efficient, charming, helpful people in a tiny place - we didn't have to queue but it would be worth it. It seems that there is an enormous variety of qualities of Tonkotsu Ramen available in Fukuoka but this was absolu...tely excellent. We sat at the bar and that was a good idea because you can see the process where they make the food and see the whole operation - great fun. You have to find out how to use the machine at the door but it's not so very difficult and the staff rush over to help you And not expensive
