Most people coming to Japan know that this country is the food capital of the world, with more Michelin starred-restaurants than Paris or New York, both Tokyo and Kyoto. They know ramen and tempura well. Few know shabu shabu, the name said to be like the sound of whishing in the pot. I have eat...en in this shabu shabu restaurants literally more than 30 times, as it was in my neighborhood then. This is gorgeous food, not inexpensive but wonderful nonetheless. We began with Japansse blow fish, which is unprepared is deadly poisonous, continued with the tempura crab, then proceeded to the ‘craft’ meat, awesomely delicious. Half-way throughway the meal, we enjoyed vegetables served in a vinegar and soy bean sauce. The meal was topped off with ice cream. As always, an epicurean delight. The white wine choice was drinkable. A French bottle of Chardonnay without a cork but rather with a screw off metal cap. Is that an oxymoron? Tip to the owner: serve the meal with a fabric napkin. The paper napkin, at a restaurant of your class, cheapens the restaurant. Needless to tell me about carbon footprint. It is ‘false economy’ to soft talk the illusory benefits of paper. Also: gear up for the 2020 Olympics. You can do a much better job of promoting foreign guests, starting with an English menu and wait staff who speak a few words of English.

I have been coming to Kisoji Himonya for many many years and perhaps have eaten here 50 times or more, each time the food and service are excellent. In fact my partner and I will eat shabu shabu here on Christmas. I've known some of the staff a long time. They are all very well-trained in the etique...tte of serving this tasty dish, shabu shabu, that for reasons unknown, has never been popularized in the US or Europe, like sushi or ramen. Kisoji may not be the top-class restaurant in this genre but it is certainly an excellent choice.

The location of Kisoji's Himonya branch is not exactly convenient if you are relying on public transportation. That said, the shabu shabu here is always excellent and the service top notch (all the waitresses wear kimonos and are expertly trained). A dinner here will run you at least JPY5,000 per p...erson, so not exactly cheap, but it's well worth the quality of food and service. Their lunch deals, however, are more reasonable. Good option if you happen to be in the neighborhood.
