L'effervescence

L’Effervescence is a Michelin 3-star French restaurant in Nishiazabu, Tokyo. Hidden quietly next to a temple, the restaurant looks like a modern mansion. The contemporary design of the dimly lit main dining room is serene and elegant. Servers are professional, attentive, and welcoming. Yuki-san ...and Takumi-kun are especially helpful and accommodating. Online reservation is straightforward. There is only one omakase menu for dinner (JPY 36,000/person), which is mainly composed of seafood, meat and produce from Japan. The evolutionary Japanese-French cuisine is absolutely delicious and full of surprises! The Kyoto Nanatani Duck Breast main dish and the Duck Thigh Ravioli simply rock your palate. Who would think of combining 56 kinds of Japanese vegetables and fruits to make a salad dish?! Mixing your own “Matcha Latte” in your mouth is the definition of evolutionary for sure! Even the final cup of drip coffee does not disappoint!

Wanted a high end French restaurant for one night in Tokyo. This was an outstanding choice! Now it's expensive, but what one should expect. The meal was paid in advance, a prix fixe menu. Top level service. We chose a unique wine that I'm trying to find. Have never seen a salad course presented in... this fashion with each ingredient to be eaten separately with chopsticks.

This was truly a special experience in a beautiful setting.. We had dinner in the private room with the sommelier orchestrating our experience. The meal was unique and spectacular. Undoubtedly, will make every diner a turnip lover, and lover of all vegetables. The duck was divine. The potato fo...caccia was delicious. We splurged further on the upgraded pairings, and did not regret one of the many yen spent on this once-in-a-lifetime dining extravaganza.

I’m always on the hunt for everything from Michelin-starred gems to hidden hole-in-the-wall spots, and this dinner easily ranks in my top 10 meals of all time. The dishes blends classic French techniques with Japanese flavors, resulting in a light yet flavorful meal that never feels as heavy as trad...itional French cuisine. The progression of the courses was great and there was no let down dish. The staff was attentive and courteous but also delightfully engaging, making us feel truly welcomed with casual conversation throughout the night. Highly recommend!

The prawn was cooked to perfection; its natural sweetness was fully pronounced, and its taste blended in well with the pea puree. The fava bean was the one element of the recipe that I personally found to be extremely off-putting; otherwise, it seemed like a well-balanced dish. The meal got its name... because of the way the small triangle "sandwiches" were arranged, like a domino effect. The dish's tastes were excellent; I found that the marriage of curry and pumpkin was rather tasty.
