“Great ambience in a flat in central Tokyo”

You dine in an apartment in the middle of the city. It's amazingly decorated, so that you could as well be in a castle. The food is without flaw, lacking just a bit of the "wow"effect.

“Just as good as it should be”

Finally had a chance to have dinner at DB and definitely glad I did. This was a special occasion- my girlfriend's birthday. It was a great venue for her birthday and we felt as though we were getting special treatment. But I think that everyone feels that way at Dominque Bouchet. We were offered... an introductory glass of DB Champagne. I really didn't expect it to be so good because it seems impossible to be able to specialize at both culinary and wine-making magic but it was VERY impressive. Not overly sweet but not bitter or overly fizzy tasting. I went for the 3 glass pairings and was really impressed with the Reisling and the Rose that came with my courses. Our first course was really a compliment to the champagne. Small appetizer/teasers made with a variety of cones with delicious fillings. My tasting was Pesceterian (fish and vegetable only) so varied a bit from my dining partner… so hers had foi gras as one of the appetizers. It was prepared perfectly and was delicious foreshadowing. One of my courses was white asparagus with "Vin Juane Sauce". The asparagus was topped with wonderful shell fish - each was delicate and delicious.. and the sauce too was a savory delight. We enjoyed a seafood course of Turbot served with incredibly crafted asparagus slices. This was truly gorgeous and delicious as well. My partner's Limousin's Lamb medallion was also incredible from a viewing and tasting perspective- I had some of the green pea zabaglione- just a part of this outstanding plate. The lamb was prepared perfectly too. A comment on the service: This was my only 5 star service experience in Tokyo in about 3 months time. To me true 5 star service means paying attention to where the guests are in the meal and being careful to minimize interruptions in the conversation. While service in Japan is king... this is an area where most waiters I've interacted with seem to fail. Of course when restaurants are busy it's easy for the wait-staff to fall into the trap of interrupting so that they can move quickly on to the next customer. This serves important goals of getting the food to the customers quickly so that they can enjoy the next bite at the perfect temperature... but it's absolutely only going to take 3 to 10 extra seconds wait to get the attention of the customers who may be mid-sentence. This somewhat mirrors the hustle and bustle of Tokyo itself. I can say without doubt that we experienced no such interruption and that the service was friendly and that we felt like family. The cheese cart was also amazing but what do you expect. There were a wide variety of cheeses from different regions/countries- some were bathed in various wines before being served (but not overly so). Each was paired with a different complement. This was an elegant touch to the meal and really pushed it over the top. I can't say enough good things about our experience here. DB is definitely off the beaten path but very accessible due to its Ginza location. Like so many restaurants in Tokyo, this keeps it from being difficult to get reservations at a reasonable hour- something you should take advantage of. Coming from San Francisco where it's tricky to get any kind of reservation for a Michelin starred restaurant... this was not only awesome taste-wise but it was easy to arrange and access. Highly recommend.

Thoroughly satisfied with the cuisine, which is authentic, modern but at the same time based upon history and tradition. A fantastic cellar provides with a perfect match of grand vin to signature dishes throughout the course L'Heritage.
