What "Kamakura Waku" Values
Using Japan:s particular four seasons further divided by six, akin to the 24 divisions of the solar year,
we aim to have our customers perceive them with the five senses.
Japanese Cuisine is a redezvous with the four seasons.
Partaking of the ingredients first among the season's harvest is "Hashiri,"
tasting the those ingredients when crops are plentiful is *Shun,*
and as Shun winds down and we taste the ingredients once more,
looking forward to next year with anticipation is "Nagori;" these number the three kinds of enjoyment.
