“Zen Philosophy in Japanese Cuisine: Saitama's Hidden Culinary Treasure”
Renowned for being one of the oldest establishments in the area, Futaba started as a ryokan (hotel) during the Edo period. Today, it is a Japanese kappo restaurant, with a unique dish called Chushichi-meshi. The dish is simple, a bowl of rice with few choice condiments, but the savory experience is ...something so much deeper. Suggested by Yamaoka Tesshu, one of the forefathers of modern Japan, he asked the then inn-keeper to make him a dish that embodies Zen philosophy. The heritage lives on today and tasting it in architecture designated as a National Historical site amplifies the experience. It is just a short walk from the nearest train station but reservations are in order.
