“Mizukomi-san is a composer of fine cuisine”

The location of the restaurant is somewhat unusual, right next to Fukushima Station in Osaka. When you leave the station, turn right and after a good 150 metres you are in front of the restaurant. The evening before our visit, we had discovered this Japanese restaurant, which only had a menu in Japa...nese on the door. We liked the design so much that we went in the evening before. We were immediately approached by two waiters. We were impressed by the interior, the purely Japanese guests and the friendly staff. We made a booking for the following evening. However, we could only order set menus. We were asked in advance what price category the menu should be in. 8, 10 or 12,000 yen. We decided in favour of the middle. When we arrived for dinner in the evening, there was a menu printed out in English at our seat - service! We sat directly opposite the chef Mizokami-san. This gave us a view of every skilful move the chef made. And how skilfully and calmly he cooked the dishes. After each cut, the knife was cleaned, the hands cleaned, the worktop cleaned. All with a smile on his face, so that you could see the chef's pleasure in cooking. The highlights of the menu from my point of view were the Abukuma River Salmon, the Charcoal Grilled Wagyu and the Rice Course, which consisted of Black Wagyu Sukuyaki with Egg Yolk and Bamboo Shoot Clay Pot Rice. The Abukuma River Salmon was finished with a glowing piece of charcoal, which gave the salmon a nice smoky flavour. The salmon roe was mild and melted in the mouth. The flavour was only topped by the presentation. A small leaf, reminiscent of a water lily leaf, was placed on top of the salmon and sprayed with water so that dewdrops sat on the leaf when served. The presentation and flavour of the Charcoal Grilled Wagyu was second to none. The meat was wonderfully tender and the vegetables were firm to the bite and delicious. The presentation was restrained Japanese and yet a kind of work of art. You also eat with your eyes. Finally, the Rice Course, which could not quite keep up with the beauty of the presentation of the two previously mentioned dishes due to the ingredients, but this did not detract from the flavour, which was exceptional. The mixture of meat, egg and rice was a marvellous composition that had its final furioso in the mouth. The wine selection was difficult, as the wine list was only available in Japanese. When listing the grape varieties, I stopped the waiter at a French wine with Grenache and Syrah, which turned out to be very tasty and suitable for our menu.
