“美味又風雅料理---Convivialité コンヴィヴィアリテ”

所在地:日本大阪 2013~2018年關西大阪米其林指南:☆ 湯大帥非型日誌評鑑:★★★- Executive Chef: Hideaki Yasuo 環境:優雅法式餐廳。 酒類:葡萄酒、啤酒等。 中餐價位:¥5,500+服務費5%+消費稅8%;NT$1,721 日本的餐廳總是困住我的美食旅行方向,一方面這國家離我比較近,二方面比起周邊國家,日本堪稱美食王國也不不誇張。來到大阪的第二天,一早因為大腿昨日跑10km拉傷,只能簡單的做些運動之外,其次也是依自己的計畫去了一間咖啡館。 旅行的每個時段總是安排得滿,回到旅館盥洗之後,換上我慣於上法式餐廳的一罐貫穿著,今天模仿了一下德國隊的風格(雖然他...們踢輸了墨西哥),不過個人感覺還不錯,還好今天的大阪風比較大,沒有太陽,下了一點點雨。 傳統與創新間的糾結 傳統與創新,這兩個詞彙在每個世代各行各業中都不斷地浮現與衝擊,同時兩者始終在糾結;前者代表著源始與創造,後者代表革命與突破,支持前者通常叫做傳統派、右派或是像英國的托利黨,後者則是尋求突破不想被禁錮,能因時因地創造改變,又像是自由派、左派與輝格黨。 法國料理在傳統與創新派之間也彼此角力競爭,然而後現代的創新派似乎獨佔市場鰲頭,你很難看到傳統法式料理在餐廳評鑑裡面大獲全勝而侯布雄與加奈爾等創意法式料理已然依靠其美名而持續的溫和保守,看看現今所謂世界頂尖餐廳,前十名看不到所謂我印象裡的傳統法式料理與創意法式料理。 傳統與創新在青黃不接的台灣飲食界也同樣掀起一波波的新思維,無論是平民飲食的牛肉麵,還是西式料理,多數從國外回來的主廚確實為了台灣的料理界掀起了波蘭,但是否有傳統與創新的糾結呢?如果講分類會比較恰當一些,如果要我硬把目前台灣的傳統與創新兼做個區別,我不會從料理去區隔,我會用食材,我會把食材歸類為政治操作下的產物作為保守派,小農等大自然食材不受中盤大盤剝削,且產地上餐桌的為創新。 Convivialité 今天中午來的餐廳是位在大阪的經典法式料理Convivialité於6月8日剛度過11年的料理時光。ConviviAlité法語的意思是「晚餐的樂趣」,整與所謂「一期一會」,以共享共存共享繁華的理念,用以提供美味的菜餚,使人放鬆心情的服務,讓每個人都能珍惜且快樂並歡度美食時光,有圖義之處。 主廚Hideaki Yasuo採用了傳統的法式料理為其烹飪方式,但他也提供獨具有個人創意的菜餚。他的妻子出生於長野縣的農家,並種植與生產美好的蘆筍、蘋果和其他作物。他也會因應日本四季設季不同菜單。 座位並不多,空間也相對小,這樣的規模在日本似乎已經是司空見慣了,餐廳也連續多年榮獲米其林一星的殊榮,我也因為小手冊的關係特別來到這裡,儘管從旅館走來這裡也花了個20分鐘,不過散散步在用餐前也是個提升食慾的好方式。 佐餐酒 Despagne Chateau Tour de Mirambeau Cuvee Passion Rouge 2014 產地:France,Bordeaux 葡萄品種:82% Merlot, 10% Cabernet Sauvignon, 8% Cabernet Franc 酒精濃度:13%。 這之久的酒莊主人兼釀酒師Jean-Louis Despagne曾在北非和北美洲和南美洲工作了幾年,回到法國後接管了他父親的事業即是Tour de Mirambeau莊園。Despagne接手之後做了一系列的規劃,在完善的規劃下將葡萄園從20公頃擴展至88公頃的葡萄園。不僅如此,他將土地種植其他作物以降低產量每年葡萄產量,其目標在使葡萄酒更為成熟度,濃度更高。 Despagne也盡力規劃地下室控溫,使所有釀酒室和儲藏室都裝有空調,其衛生程度於1997年獲得ISO 9002認證。酒莊產區的氣候溫暖,冬夏均相當溫和,土地則有石灰、鵝卵石和粘土的等元素,酒莊均以人力手動採摘除,壓榨葡萄汁並進行發酵。 這支來自波爾多的品種Cabernet Sauvignon 、Merlot以及Cabernet Franc混釀的葡萄酒,紅潤深遂的色澤顯示波爾多葡萄酒的優雅,搖晃一下,酒杯緣徹流下齊步的酒淚,酒面平凈氣味均勻沒問題,色調棕紅,酒緣從微透明近粉入深紅,十足飽滿帶勁。 氣味是濃郁果香,黑醋栗、胡椒、黑櫻桃、可可還有糖漿味。 飲下,四平八穩的波爾多,甚至有些級別酒莊也如此一般,櫻桃、醋栗、黑櫻桃風味,略帶綠葉青色草本植物味,前味稍顯激烈辛澀苦悶,中味明亮逐漸酸果,可蓆尾韻有苦悶澀嗆,不過還算中規中矩。 Smooth Scrambled Eggs 第一道點心是蛋慕斯,細蔥黑胡椒佐之,濃稠相當高,溫熱帶點鹹,但不像鹹蛋,口感有點鴨肝風,這味道我愛。 第二層有烤土司舖起士,烤的柔度比脆要美麗,有比薩感,左些蛋慕斯帶些甜味,這樣配法也很棒。搭簡單的波爾多小酒莊的酒,可均衡酒的木桶氣味,感覺柔和。餐酒搭配度70%。 Mozuku See Weed、Orange Calm、Japanese our Plum、Water Shield 第二道是也是做的如晶凍一樣,水盾被來自琉球產的水藻包覆,中間是則是一顆日式梅子,而晶凍則是用柳橙風味做成的晶凍,此外還有切丁的干貝。 這道我感覺像吃果凍或稱之晶凍,滑溜滑溜的口感,帶來一些酸梅和橙香,風味低調,但體驗食材的動機比較鮮明。搭波爾多酒,原以為會苦辣。餐酒搭配度70%。 The Spring Beans Potage、firefly Squid、Bamboo Shoots 第三道是以春天日產的豌豆與春季碗豆湯,季末的瑩章魚,切丁筍子還有薑汁風味的泡泡,風味十分迷人。 雖然沒有綠咖喱或香茅卻略顯些類似滋味,美味迷人。搭波爾多前刺激辛辣,後平穩舒適,很棒的湯品。餐酒搭配度70%。 Bread 麵包兩款一是軟彈麵包夾起士,一是棍子。沾上帶海鹽奶油的棍子風味舒適爽口,因為奶油香滑所以在口中有馥郁感,搭波爾多前味飽滿,尾端澀辣。餐酒搭配度65%。 The Grilled Spanish Mackerel、Green Olives Puree 這一道是烤西班牙鯖魚,青橄欖泥,百合肉,櫻花蝦米、紫蘇、味噌、梅子等。 這塊鯖魚符合半生不熟標準,日本人喜愛,台灣的話可有諍了議,切開入口,這味道不是夜市可解釋的,搭葡萄酒溫和亮麗,感覺四平八穩,意思是沒人抗議我的觀念。餐酒搭配度60%。 The Roasted Pork Madera Wine Sauce 今日主菜是烤豬肉低溫烤法,馬德拉紅酒醬,佐小黃瓜球、四季豆、芥茉子、櫻桃蘿蔔、黃節瓜、小黃瓜葉,筍、紅洋蔥、韭菜、還有一些如甜菜根葉、青江菜、半生不熟馬鈴薯等。 豬肉切片約七分熟,彈肉嫩軟,搭醬汁讓我感覺美麗快樂,佐其他配菜頓時出現短短刺激與快活,搭配上都是沒問題。 佐這款波爾多紅酒前頭辛澀被均衡了,竟然有二級酒莊酒的爆香美麗,所以...法式料理搭法式紅酒是一種尋寶效應。餐酒搭配度80%。 Sorbet 接下來是清口的冰沙,下曾有一塊塊切丁的水果,香甜舒適。 The Chocolate ball、Roseberry、Rum ice cream 甜點則是一道手作點心萊姆酒冰淇淋,除了冰淇淋之外,另外還有乾漬草莓、核桃、巧克力醬、巧克力片佐巧克力球,蔓越梅嗎? 這道甜點解釋莓果們鮮少合作,做為中餐結尾恰到好處。餐酒搭配度79%。 Petit Fours 哇.....原來大阪的傳統法式料理也十分厲害,沒有忘記餐後小點餐車。我選了小塊蛋糕、黑醋栗法式軟糖還有一塊糕餅,看看有意思吧。 原來是葡萄風味水果糖,十分馥郁的水果味還有甜口。 蛋糕是葡萄乾的的吧。味道恰好不會太甜,品值也很好,最後小塊是塊奶油烤薯餅,綿口甜甜的,很好吃。 Tea 錫蘭紅茶加檸檬片、紅白方糖或白糖結尾。加紅方糖和白方糖。完美好喝...可達到節酒效益。 評語:主廚的風雅料理 創新料理與新法式料理甚至杯歐風料理等以精簡食物呈現複雜手法以及純淨理念的料理模式現在已是世界美食顯學,凡以各家料理排行,仔細看一下料理風格,無不如此,儘管像龍吟還是Den等劇日本料理風格但又不太走純日本風等餐聽奪下世界聲譽,也不難發現。 然而像是傳統的法式料理似乎就不怎麼吃香了,然而不設限的我對於像Convicialite這樣的傳統中帶些個人風格的料理,自是不會有先入為主的偏好。 連續多年的一星,中餐價位不貴且讓人再嘆親民,料理脫俗不馬虎,今日品嚐確實讓我味蕾歡喜。

“Delightful restaurant”

We booked a couple of months in advance. They do have limited tables. We went there for lunch. The restaurant is located at a corner. We used google map to look for it. They confirmed my reservation via email and I was also asked to choose the degustation course menu - which is fine with me. The fo...od showcase the chef's creativity and of course, it was a very good meal. We ordered wine by the glass as they have a few choices to choose from. In the end, both of us ordered 7 glasses of wine for this lunch. I think it is more preferable than opening a bottle as we had white and red wine to go with the food. Price wise, it is expected to be pricey but we think it is worth it for the dining experience.

“Great Little Restaurant”

This is a nice place. Small and off the beaten track but worth the visit, We had lunch on a Sunday and had the 8,000 Yen Surprise menu which was great. They have a good wine list and prices are great. Food was very good and seasonal like all Japan restaurants. Very good service and they even spoke s...ome English. I would recommend for sure. This place I will try again for dinner.

“Exquisitely presented French cooking”

The restaurant is small and only has 4 tables. It flawlessly evokes a modern French feel and is a quaint setting for the delicious food. The food of the restaurant is very lovely. Most of the dishes were executed and seasoned with great care and attention. We began with a scrambled egg, which came ...nicely presented. A quail’s egg is very smooth and fresh. The highlight of the meal was the John dory, which came pan-fried with american sauce. The meat of the fish was soft, moist and tender. For dessert, we were given pina colada. It paired well with the pineapple and ginger. The food proved to be hearty and well worth. The wine list at Convivialite is good for such a small restaurant and one can tell that prodigious attention has been paid to curating such a good range of wine. Not only are there a variety of reds, whites, but also rosés and champagnes. Many of the wines hail from France. The pricing also leaves you with quite the amount of choices. There service at the restaurant was pretty outstanding. There are only two servers, they were not intrusive, but were always polite and willing.
