Kyoto Cuisine Matsumasa - Dashimaki Tamago
Matsumasa is currently run by the fourth-generation owner. Since the time of the first generation who opened the store as a catering service, dashimaki tamago has been a specialty of the store, now served in the dining area rather than in a bento box. Freshly made dashi is used, and customers are served freshly rolled, hot tamago, which is the store's commitment. Although simple, it is a traditional dish passed down through generations and is a gourmet delight that complements Kyoto cuisine. Depending on the timing, it may not be available, but it is offered as part of the kaiseki course throughout the year. Please enjoy it while feeling the tradition.

Seasonal Recommendation/Ayu no Arai
Ayu,the representative ingredient that reaches its peak in early summer. Known as the"summer heralding" fish,we offer ayu in a slightly unique style at our establishment.

The whole fish is elegantly prepared per person, served with slices of salted Kyo Uri as shown in the photo. Surprisingly, the fish is rich in fat,firm in texture, and has a faint aroma reminiscent of fresh watermelon or melon. When eaten together with the Kyo Uri slices, it delivers a refreshing taste of "summer."Ayu no arai is served as part of the kaiseki course, but due to procurement reasons,it is recommended to request it upon reservation if you wish to enjoy it.Don't miss this seasonal delicacy that will blow away the dampness of the rainy season.
