“Definition of quality and class”
Did you know that Kyoto has an ordinance that all restaurants must serve local sake as the first drink to do cheers? Places like Karatsu is the reason why I love Kyoto. They give attention to every smallest detail (even the moist chopsticks ;)) and the quality of the ingredients and preparation is... just top notch. This quality restaurant is owned and run by the impressive Karatsu couple - two very classy professionals. They won a Michelin-star in just 2 years of opening and it’s definitely well-deserved. With only 10 counter seats, you can enjoy an intimate feel and escape from reality. They serve rare sake and shochu, all of which are only highest of their classes. I drank a lot. Like A LOT. But I didn’t feel A THING the next day. In fact, I felt great. That proves how good the alcohol was.
