“Tremendous value for a world class experience”
We stayed in Kanazawa for five nights and were very impressed by the food and beverage scene in Kanazawa. Our final night we dined at Respiracion, a restaurant I had just come across on line and thought the background of the Chefs sounded like an interesting foundation for a great experience. We we...re not disappointed! Infact, I would rate it up there with the best dining experiences we have ever had. As a chef and restaurant owners ourselves, we have made it a priority to experience all manners of restaurants, whether that be street food or the top rated restaurants in the world, we will remember Respiracion forever and consider it one of the very best. I’ll also mention that it is extremely good value. Should we ever come back, I hope that they will be charging more for what they are delivering.

“To live and consume art is to experience Respiracion”
The live and consume Minimalist Art is to experience Respiracion. The plating and visual aesthetics are simple, for only the highest quality ingredients and richest of flavors can pull through. This is very successful accomplished with world class execution at Respiracion. I had been fortunate to di...scover Respiracion in 2019 and back then the experience was unlike any other. So, naturally a return visit to Kanazawa required another visit to Respiracion. With greatness you continue to learn and get better, which Respiracion has taken to another level. In the waiting room, a welcome tea is served in an old storage room turned art installation. Every dish was crafted, presented, and served with the utmost care and detail. A few familiar favorites continued to luster like the gold of Kanazawa; Impact Shrimp (bite of sweet shrimp) and Paella (hairy crab). The wine pairing was expertly matched with each dish, complementing and enhancing the flavors. Our server who is from Kanazawa and studied in the United States explained each dish in English perfectly.

“My best food experience in japan”
WOW!!! If I had one option to give a six star rank, I would've probably give it to this restaurant. Every single detail was precise! First, when we came in we were charmed by the clean, modern and beautiful design of the restaurant. All along the dinner the service was spectacular, even for us (engl...ish speakers) they managed to explain every single detail about the dishes. Finally, the food!! Beautiful and interesting presentation together with an amazing taste combined with a very good Spanish wine they was absolutely delicious. The Spanish insperation together with the Japanese touch and ingredients was outstanding. I wish I could come here again sometime. Please don't miss this restaurant if you are in this area.

“This should be featured in chef's table!”
I would give 6 stars if I could! We had lunch here and every bite of the eight course menu was exceptionally delicious. What I loved most was that they use mostly local produce from Ishigawa! It's a place for a special event in terms of price but the creations you get are worth every yen. Make sure ...to experience it, before it's all over the gourmet news. It will not stay a secret for long.

“The best of the best.....”
Many of you undoubtedly have visited highly rated restaurants and have been disappointed. However, read all the five star reviews of Respiracion, praising this restaurant to the heavens, add 10% and think of this place as i.e. the Noma of Kanazawa! I honestly cannot think of anything more to ask for...; each of the eleven courses on the set menu (plus coffee and homemade sweets) was just spot-on and the service was superb. Add to this the more than fair price level. All in all an experience to remember. This place is underestimated and these guys deserve all the praise and recognition (including from Michelin and Gault Millau.....) they can get. A must visit gourmet place if you get the chance. And rather than Spanish, think of the kitchen as international fusion based on local ingredients and with a lot of umami and a Spanish touch.
