“Amazing food and service!!!”
Made a reservation for the final night of a honeymoon trip as a fitting conclusion for an amazing trip. Between the amazing view and ambiance of the dining room, at least one reviewer said that while this restaurant does not have a Michelin star, it deserves one, and after our dinner would second t...hat recommendation! There were three fixed menu options available when we dined, which mostly varied by the number of courses offered and each had choices for a couple of course selections. There was a little bit of variation in some of the courses offered in each menu, and my wife asked if it would be possible to substitute one of the alternate courses for dietary preference from another menu and that was not a problem to do. We both enjoyed the 9 course menu with the wine pairings (7 and 8 course menus were also offered). The food was spectacular and would describe the cuisine as French with a Japanese twist, but in a way that makes sense and adds to the dish rather than trying to be something just because. While we don't like to be the people who take pictures of dishes when we are fine dining, the camera was out due to necessity of capturing the beautiful presentation. The wine selections were very well paired with the dishes and some of the wine selections were familiar in grape and region but very unique in style. Although this dinner was not the absolute best food and wine pairing experience that I have have, it is most certainly worth doing and for the price of the pairing is probably one of the best I have had in that range. The service was flawless and there were always as many people as were necessary to "effortlessly" transition from one course to another. While the prices are not inexpensive, that is the nature of an experience like this, we felt that the restaurant and its staff delivered great value for what we received. We have certainly spent more in other restaurants and not felt the same way, including a number of Michelin ranked establishments. If this style of cuisine is to your liking, we cannot recommend this restaurant more highly!

“What a Surprise!”
I was hesitant to book what’s labeled as “modern French” restaurant in Japan. I don’t like sauces, which I thought these dishes would have in spades, but were we surprised! Started with a scrumptious risotto. So light, not remotely creamy, and incredible flavors. Perfection. I had the sea bream... which was another true winner. So light, beautifully prepared and absolutely delicious. Ditto for the duck my partner had. The dishes and cutlery were some of the most beautiful we have ever seen. Don’t miss this one.

“Nice selection and nice setting”
Friendly professional servers and a good selection of Western inspired entrees and sandwiches. We arrived at the hotel sort of late and it was the only available choice. High prices aside, the food was excellent and the service was friendly and efficient. I had a roast chicken dinner I really enjoye...d. The others had burgers and an Italian panini that was very good. Breakfast here is also excellent.

“Awesome views, great food and ambiance”
at this award winning French eatery, diners are spoilt with contemporary Japanese interpretations of modern French cuisine alongside skyscraper views. The lofty space is decorated in sophisticated beige and brown tones, with additional glamour from lots of mirror paneling and chandeliers that reflec...t the glittery city and bay views. There’s sofa seating all along the corners of the restaurant providing plenty of cozy tables. The menu at Collage is really a cultural and stylistic mélange; part French, part British, with elements of molecular gastronomy, tapas, and kaiseki cuisine. There’s also an innovative “bread pairing” concept, which is to serve special kinds of bread with unique shapes, flavors and texture to complement the food.
