What is shabu-shabu? It is a Japanese hotpot dish featuring thinly sliced meat blanched a couple of times in boiling broth in the special pot on the dining table and served with sauce alongside vegetables, tofu, kuzu starch noodles and other ingredients cooked in the pot. Sesami sauce and ponzu sauce are popular choices.
