The best EDO-MAE SUSHI in the world. Number one and only one!!! The special aging technique created by Master KIMURA is like a magic. Aging fish spread very impressive UMAMI. You can taste deep UMAMI with each bite.

“Confident and bold - not for beginners”
(If you are new to Japan or to sushi, look elsewhere. The experience, although not in the remotest sense unfriendly, can be very awkward indeed if you are not familiar with Japanese custom and cuisine and do not speak at least some Japanese. There are other options to try high-end sushi that would b...e much more comfortable) This is a chef at the top of his game. Kimura-san has developed a truly impressive level of confidence in the flavour profile he has developed (bold, rich and warm) and in the development/progression of the meal as a whole. This is a true master at work, with a depth of knowledge that allows him to orchestrate a personal statement while letting the individual ingredient speak for themselves. Nuff said.
