Concept
Our hometown, Tsubame-Sanjo in Niigata, is known as one of the world's leading manufacturing cities. It is a major production area for metal Western tableware, such as knives, forks, and spoons, accounting for more than 95% of Japan's domestic production. Niigata also boasts the sea, mountains, and rivers, and is one of Japan's heaviest snowfall areas, leading to premium ingredients such as mineral-rich vegetables, fruits, fish, and meat raised by snowmelt water. At Bit, we use only the finest selected ingredients from this bounty. Our mission is to share the world-class manufacturing and food ingredients from Tsubame-Sanjo and Niigata with the world through dining.
