KIYOHACHI CHOPPED SALAD 本店

I ate two take out meals from Kiyohachi Chopped Salad on my most recent Hokkaido trip. The concept is a good one--healthful organic ingredients, prepared in front of you and then served up very fresh. It's one I've seen in the UK as well as some parts of the US for the last 10-20 years. The execu...tion needs a little more work, after which this will become a perfect place for lunch or dinner--eat in or take away. The restaurant is fairly new and quite clean and easily accessible as it is on ground level--no steps or obstacles for those who may have mobility challenges. On my visits to pick up salad (take away being preferable for me during the current coronavirus pandemic), the restaurant was just a bit cluttered with crates of food in one corner, but it wasn't bad as I could see the food was all fresh and came from various locations across Japan. Service is very good. I ordered in Japanese so not sure how much support they can give in other languages, but it's salad and the menu is fairly limited, so it shouldn't be difficult. I had the cobb salad and the Mexican King salad. Both times, the ingredients were fresh and the salad included a lot of vegetables, fruits and meats. In fact, the salad was actually quite heavy. This is not just 99% lettuce-type salad but much more like salad-as-a-meal. I like the concept a lot, and the staff were also wonderful--patient, well mannered, and helpful in selecting from the menu. I ordered the sliced potato side dish, and when it didn't turn out as well as they expected, they refunded the price of the dish but gave it to me to try anyway. Very fair and customer friendly! Three minor points for improvement: - On both visits, the salad was very watery (like >1cm of water in the bottom of the salad bowl), suggesting that more care is needed to remove water (spinning the leaves, perhaps?). - Also, the lettuce is way too finely chopped in my personal opinion, resulting in something that is more like a cross between a salad and lettuce puree. - The chicken in the cobb salad was well cooked but almost without flavor. I'm sure this is a result of the focus on being healthy, however would be good to consider a bit more flavoring. To my mind, these minor kinks just need to be worked out and then the experience will be fresh and delicious with no detraction. Price is not cheap--that's because you're getting a lot of fresh vegetables in the salad. I think it is very fairly priced for what they offer, and after each meal, I was very full and couldn't have eaten more. With the fresh and healthful menu concept, thoughtful and flexible staff, Kiyohachi Chopped Salad has a ton of potential. Give it a try on your next visit! Hope this helps...
