The mountain trout is not a fatty fish, and so it is hard to grill. Just an instant of overcook ING means the meat dries up, and too short a grill time means the m...eat is under cooked. Here, they have perfected every single aspect of grilled fish. The meat is just cooked, still fluffy and tender with moistness and yet has enough of a chewy texture to have a nice mouthfeel. Not a single bit was dry. The skin was not fatty or oily, and was crisped with not a single trace of burnt bitter smells, while having a nice charcoal aroma. Some bits can get abut salty, but the soba balances that out. We stripped the fish down to its bones and ate every single sweet delicious morsel. Just, amazing. すごい美味しかった！
