Our store's eels are entirely domestic eels. "Tokuchukatsuman" (specially made live eel) is a registered trademark of this store.
For our store's prided specially made live eels, from the time you order a good live eel once we finish cutting, skewering, grilling, or steaming it the preparation time will take around 40min at its shortest, owing to our meticulous cooking with Kishu ubame oak charcoal. While you wait, we bring out an order of freshly cut liver and wasabi, and eel bone chips. In serving freshly cut eel this store prepares nothing in advance. We think of it as preparing cuisine that capitalises on the eel's ingredients. Please do not hesitate to taste the delicious eel.
