◆ Our Secret Maturation Technology
We mature the fish (mainly white fish) to the max to fully bring out the delicious umami (Japanese savory taste) of the ingredients. While fresh fish has a great texture, it lacks in umami. This umami magnificently deepens during maturation. It also alters the way the fish is handled.
◆ White Fish Flown Directly from the Goto Islands, Nagasaki Prefecture (Air Transportation)
The advanced procedure which involves exsanguination and nerve tightening takes 2-hours per fish.
◆ Two Kinds of Sushi Rice (red vinegar or white vinegar) is Available and Used Accordingly.
All wasabi is "Hon Wasabi", delivered via contract farmers in Shizuoka.
