Delicious grilled yakitori chicken requires - 『freshness』, 『cuts of meat』 and 『the way the meat is skewered』. But, above all, the most important factor is 『how the meat is grilled』.
The 【grilling method】 creates a stark different between the 『yakitori』 served at izakaya bars and the 『yakitori』 served at yakitori restaurants.
Our 『yakitori』 chickens are grilled over white charcoal (the temperature at the center of the burning charcoal reaches around 1000 degrees). That is why they are crispy outside and juicy inside. This cannot be imitated with gas operated grills. Handling of white charcoal is difficult and requires the skill and experience of a craftsman. Our grill is only manned by highly-experienced craftsman who can handle white charcoal properly.
