We are the jidori chicken cuisine restaurant serving "Yamato-nikudori" which is a jidori to represent Nara Prefecture.
Yamato-nikudori; it's the breed of jidori chicken produced by mixing a "Nagoya Cochin" and "New Hampshire-mixed" hen with a "Shamo" rooster. It has dark red meat, meaty flesh, like that of Shamo, with a moderate amount of fat.
When grilled over a charcoal fire, it takes on a distinctively chewy texture, unlike any other breed of jidori chicken, and the special umami. Fully enjoy the umami in your mouth. It is said it surpasses the umami of beef. You're sure to get hooked once you try it.
