Our restaurant's "negima hotpot" is made with ample use of local traditional Edo (Tokyo) vegtables such as Senjunegi (Tokyo spring onions), Edo-na (a selectively bred komatsuna), and Mikawashima-na,etc.
Aside from our well-known "negima hotpot," dishes made using time-honored Edo methods for conger eel, gizzard shad, stewed Hayama beef tendon, and Edo miso are tremendously popular!
