We serve dishes made with wild pufferfish which the master uses his expertise and skill cultivate for 50 years to bring out the umami to its full extent.
While 70 to 90% of pufferfish on the market is farmed, we are committed to using wild white tiger puffer caught in the Bungo Channel and nearby waters in Kyushu, which are famous fishing grounds sandwiched between Kyushu and Shikoku. We age the pufferfish to give it maximum umami (savoriness) for our customers. The selection of Japanese sake that plays the supporting role in complementing the star, the pufferfish, is selected by our proprietress according to the high-quality available offerings.
