This "hole-in-the-wall" serves a surprisingly good ramen with a broth flavoured with smoke sardine. This is the first time I have had ramen with this broth & will defintely return for more!

“Cash Only by Order Vending Machine Homemade Ramen”

Great noodles and broths with various duck meats. You pick one of three broths and several noodle types and duck pieces. English menus help, but then you feed cash into a vending machine for the kitchen order tickets and beer. Everything comes fresh and tasty

煮干しベースの中華そばです。 実にシンプルで、麺は細麺、コシがあり美味。煮干しベースとは知らず訪れたので、びっくりしました。 好きな人は好きなんだろうな〜。ミシュランノミネートには、少し疑問を感じました。 There are tons kinds of ramen broth in Japan. This is Niboshi base which is small dried fish, well known for Japanese broth. Normally, the fish is used for broth lightly, but this soup, I could ...feel the bitter taste as it is. Straight style noodle, nice texture, and flavor. However, I did not like the soup. In my opinion, it is too bitter because I'm a miso person. I was curious why Michelin nominate this ramen shop.

Simple dishes, complex flavours. One of the most basic ramens we've had in Japan yet ever so tasty. There are a couple of stock broths to choose from, including a slightly anchovy tasting one that was crazy delicious. The noodles were perfect and the pork juicy and porky. Ito is a tiny restaurant i...n the basement of the Tokyo Ginza Building. It can be difficult to find and there is no elevator access that we could see. We had a pram so it was challenging getting downstairs. Ito is a ticket restaurant, meaning there is a vending machine you put your money in, select your meal and give the produced ticket to your waiter. The guys running the restaurant were very friendly and helpful. Not much English though but that really doesn't matter. Ito is a Michelin Bib awarded restaurant which means exceptional food at moderate to cheap prices. Ito is very cheap. You can eat here for less than $10. A ramen dish is less than 9 bucks (900 yen). Cash only. The ramen is extraordinarily good considering the price. If ramen is your thing you are in luck. Upstairs is the almost as good Mugi to Olive - the other Michelin Bib Gourmand ramen joint in Ginza. I have a review for that one too. Do yourself a flavour favour and check out Ito when you're in Ginza.
