We purchase quality food ingredients in season from throughout Japan.
We purchase quality, fastidiously-selected natural fish and seafood in-season from throughout Japan after visiting the local fishermen.
Our sushi rice consists of 3 different types of rice to pursue the harmony between rice and the sushi ingredients.
Using 3 different vinegars (white, rose, and red) combined with different rice brands from different production regions maximize the original rice flavors.
We sincerely studied each sushi ingredient and drew out the unique qualities of each to create our sushi ingredients unique to "Sushi Kiyoshi."
