Our master goes to the production area, fastidiously selects buckwheat's seed, buckwheat flour, seasonings, and other ingredients, and purchases them with their producers. We use 3 kinds of buckwheat flour to handmake soba noodles such as "Hokkaido Horokanai buckwheat flour." We also make soba dipping soup using Hokkaido kelp, which is known for its elegant sweetness and clear soup stock from it, and mixed it with special broth that is made by blending four types of dried bonito and dried mackerel of the highest grade. We are particular about making "really delicious food." Please experience the taste sincerely pursued by our master to your heart's content.
