“Fine dining meets sushi”

This is by far the best sushi I have had in my life. The restaurant is small and seats only 4 – 6. The experience is bespoke and the attention to detail reminiscent of some of the best restaurants I have been to in, e.g., Copenhagen. The setting and lighting reminds me slightly of Alchemist, except ...it is sushi. The dinner felt like a symphony of flavors with every bite building on the previous one; all paired with some of the best sake. The chef and his team clearly know what they are doing. And I am 100% sure that they will soon earn a Michelin star. Absolutely amazing experience for a mere $250 per person. Whoa.

“Though we committed a cardinal”

Though we committed a cardinal sin and were two hours late - due to me having misread my reservation time like an idiot - the chef and staff very graciously accommodated us in their second seating for the evening (we are highly appreciative of this generosity when they certainly did not have to). A...s a result, we were treated to an extremely complete set of courses that were as innovative and meticulously executed as they were delicious. The chef's attention-to-detail on the execution of each course was superb, down to the different tice temperatures of each piece of nigiri. I have no doubt that the staff at Sushi Fukuzuka will contine to ascend to greater and greater heights and am extremely happy to have enjoyed dinner here.

“Molecular gastronomy made simple”

This intimate 6-seated dinner experience is like none other. With a focus on fresh ingredients, temporality and heat, I feel incredibly grateful to have partaken in some of the most flavorful sushi bites one could have on this planet, perfectly finished with one of my favorite (and difficult to find...) desserts: handmade matcha ice cream and red bean sandwiched in two flaky wafers. The sushi chef has a great sense of humor to carry you through a two-hour meal. Of course, at this restaurant, if you come as a party of one or two, you inevitably feel closer to those around you as the chef works from one one dish to another, from left to right, as if to communally share that feeling of anticipation for the next dish. If you’re a light eater, don’t stress over the portion—the chef is more than happy to bargain with you on the size of the rice, as long as you don’t start asking for sashimi. The language barrier will not stop you from enjoying your time and making friends with those next to you. One thing is, this restaurant is tricky to spot. It’s down a slim alleyway on the second floor of another shop. Ascend a slightly spiral staircase and you’ll confront a humble sign, 寿司ふくづか, signaling that you’ve arrived. Make a call if you fear of being late.
