■Choice of Ingredients
・Specializing in Hokkaido's Kuroge wagyu beef,
we stock recommended prefecture-produced meat from
a contracted butcher.
Further, we also handle A5 to A4 rank beef.
■Specialty in Cubing
・Yakiniku is typically cut in thicknesses of 2mm to 4mm,
but our restaurant cuts 20mm to 25mm cubes.
The reasoning being that cooked at higher temperatures
the meat's juices are trapped within, whereupon cooking
at moderate temperatures the highest degree possible of
juiciness can be enjoyed.
