Our chargrilled eel, prepared by the chef cutting one live eelopen at a time by hand, skewered, then perfectly grilled overintense heat from the Binchotan (high-grade white) charcoal, is characteristic for the grilled color and aroma unique to the Jiyaki style "grilled eel."
