It must be a Kuroge Wagyu variety, reared in Miyagi Prefecture, sold in markets approved by the Sendai Beef Promotion Council and exhibited at competitive exhibitions, and graded A5 or B5 by carcass transaction standards of the Japan Meat Grading Association.
We aim to be a restaurant where customers can enjoy Sendai beef in the most delicious ways in Japan.
We carefully choose the rarest female cows from amongst Sendai beef Miyagi proud of. The meat that has been dry-aged for over 35 days contains more than double the levels of amino acids, the umami ingredient! We hope you will enjoy it.
