Hand made Udon noodles are not soggy and not soft, supposed to be pretty ferm. I think their Udons are pretty good. You can enjoy Udon in different style with variety of dishes and combinations. I had Sukiyaki with cold Udon, my mother had it in curry came with Tempura Don, and my brother had com...bination of Katsudon (Pork cutlet on rice) and cold Udon. They also have Chawan mushi, sushi and other typical Japanese food. I thought Dashi wasn't that great but not bad at all. I think you can not expect all homemade taste from franchise restaurant but wherever you go you can have same quality of food.
