He ensures that each piece of sushi is served to the highest of standards by being flexible with a creative flair. Instead of merely seeking stability and efficiency, this restaurant goes the extra step to change the serving period and/or the method of preparation according to the characteristics of the ingredients. Thus they only serve food which they believe to be delicious and not 'over-worked'.
