The key to the taste of udon noodles are the ingredients such as flour, water and salt and the skill of the chef.
Water and salt are exquisitely adjusted according to the temperature, mixed and kneaded "tap-tap" in every direction (TONTON).
The dough kneaded by hand of noodle master, matured, and cut into thin shapes (TANTAN).
Through these process, shiny and smooth noodles with unique firmness (TSURUTSURU) are prepared, which noodle master is proud of.
