One relatively new shop, having opened in February of 2015 in Osaka’s Minami-Morimachi, has gained an astonishing amount of attention: Ramen Hayato.

The main base of this shop’s broth is Hokkaido’s light-brown miso paste, as well as a certain type of miso called ukikoji miso – this describes a paste in which some of the koji-infused grains of rice with which miso is made are still visible. This unique mixture creates an entirely new kind of soup. On top of that, this broth is then infused with accents of ginger and pepper, unique compositions of flavor that’ll gently spread in your mouth.
