The precious live eel stocked every morning is fresh and very fatty. We purchase directly the best live eel at that period all year round. The eel is pinned, dressed on the back, skewered, steamed and grilled according to the traditional Edomae style. Please enjoy it with our secret tare sauce that is added on from our foundation. We are so fastidious about the ingredients and cooking method in order to serve you the eel dish with fully accentuated umami flavor. And we are the only restaurant you can enjoy authentic Hitsumabushi in Tokyo. Enjoy it with your preference, with relish or by pouring dashi stock soup.
