“Advance course in Japanese (Kanazawa) cuisine”
Mainly consisting of local seafood, produce and wine(sake). I wouldn't say it is foreign-visitor-friendly. I did not see English signs or menus. Highly recommend going with a Japanese-speaking friend or guide. We had a "course-meal" with various local dishes. There were 7 to 9 courses of small porti...ons of appetizers, main course to desert. You will not get stuffed here but enjoy all the different presentation, texture and taste. If you are interested in trying high-quality local sake (rice wine) ask for the list and try a few. Some are fairly expensive but could be interesting to compare them.

“Our favourite sushi place.”
Shunsai Washoku Kofuku to give it the official name is located on the second floor of the market and known as Kanazawa's Kitchen. Unfortunately you will not see any English signs on the outside. We found it by recommendation (and luck) Our three days in Kanazawa involved nine meals ... three were ha...d at this fine establishment and we regret there could not have been more.Highly recommended.

“So Fresh So Good”
My mum doesn't take raw food so it took us sometime to find a restaurant which serves cooked food and sashimi! I was contemplating between the crab or the chirashi and because I saw so many crabs at the market, I opted for the kanidon! Seafood here so fresh so good!

Don't know the order of course servings”
They don't know the order of course servings. Upon the start of the crab season, we ordered a course. We would expect that the waiting staff would explain the order of the meals to be served. But they failed to do this and served as they needed to. So, we ended up eating the "shabu shabu" (raw crab dipping in boiling stock) first while leaving the grilled (thus hot) crab on the table, sitting, getting cold, and drying. Then, they served a tempura dish. We then prioritized eating this while letting the stew stock evaporating. The restaurant was not crowded and we think that it's the chef's task to check customers' dining progress with the waiting staff. We guess that this restaurant is located inside the Omicho Fish Market and is thus targeted at one-time only tourists. The food was not bad but we did not appreciate otherwise great crab meals to be getting cold and drying!
